500g Fresh chilli’s
15 cloves garlic
Ginger root (approx. 5 to 10cm)
4 cups Organic cider vinegar
4 cups Organic Raw Sugar
6 teaspoons natural sea salt
Method:-
Remove seeds and membrane from chilli’s (best to use gloves)
Peel Garlic & Ginger
Blend chilli’s, ginger & garlic in food processor with a little of cider vinegar.
In a saucepan dissolve sugar in cider vinegar then add rest of ingredients. Simmer till sauce reaches preferred thickness (about an hour). Sauce will thicken further when cooled.
Bottle into sterile bottles or jars.
